GRILLED CHEESE SANDWICH FOR MEAT LOVERS - Like Me!

If you're watching your weight, this recipe definitely isn't for you, but if you enjoy some cheesy goodness with meat thrown in for even more flavor, be sure to give this one a try!

8 Large Slices of Bread of your choice(Whole Wheat, Sourdough, 12-Grain, etc)
1/4 Cup Chipotle Pepper Sandwich Spread and Dip
16 Slices Muenster Cheese
16 Slices Cheddar Cheese
16 Slices Deli Turkey Breast
16 Slices Deli Baked Ham
8 Slices Smoked Chorizo

Arrange your slices of bread on the counter, dividing evenly so you can spread the dip over the top of each slice.  Top 4 slices of bread with 2 slices of cheese (Muenster & Cheddar), then evenly divide the turkey, ham and chorizo among the slices.  Top with the remaining cheese, then bread, dip side down.  In a large non-stick pan, heat 1 Tbs Oil over medium-high heat.  Add two sandwiches to the pan, cook, pressing down occasionally and turning once until all the cheese has melted and the bread is golden brown.  This should be about 2-3 minutes per side.  Repeat this same process with oil and the rest of the sandwiches before digging in!  Serves 4 lucky people.

SUPER SIMPLE APPLE CRISP RECIPE

Not only is this recipe really easy to make, it tastes absolutely delicious!

In a microwave safe coffee cup, mix 1/2 unpeeled, cored and chopped apple of your choice. (Pink Lady, Golden Delicious, Granny Smith, etc.), 1 Tbsp of Water and 1/2 Tsp of Cinnamon. Then top with 3 Tbsp Granola of your choice.  Microwave on high for about 1 1/2 - 2 minutes, or until warmed through and the apple is tender.  Add whipped cream if you want even more yumminess!You're all done and ready to eat.

STOUT FLOAT FOR DAD THIS WEEKEND/ROOT BEER FLOAT FOR THE KIDDIES

Don't go out to get dad another tie this year for Fathers' Day. Try something really unique and truly simple that will make him smile with glee. Even better, once you make dad's version, surprise the kids with this  yummy treat minus the alcohol.

1 Pint of Vanilla Ice Cream
45 Oz. Stout Beer (Guinness Stout is a good one) = 3 Large Cans
Nutmeg (Ground it or just use the spice you sprinkle on)  I have no time to grind any spices.

Substitute Root Beer for the kids.

Fill 4 Juice Glasses with 1/2 Cup Each (about 2 scoops) of ice cream.  Top it slowly with Stout or Root Beer.  You may not actually use all of the stout so save that for dinner. (lol)  If you like, sprinkle with nutmeg, then serve these delicious floats with spoons.

3 YEAR OLD IN THE MOOD FOR A NEW CAR - True Story

At about 5:55am this morning, my husband noticed a small young 3 year old opening the door to peek into a Honda Accord parked across the driveway, before calmly slamming it shut. He then walked to the next door neighbor's Camaro, opened that door, looked in and after apparently not feeling warm and fuzzy about that one, decided to zero in on my Cadillac, which I had foolishly left unlocked last night. Clearly, this car was right up his alley. He liked it so much, that he decided to sit in the drivers' seat to check it out even more closely.  I, of course, was unaware of this entire scenario until later. Wow! While in the restroom downstairs  my husband ran down the stairs faster than he normally does ever.  By the time I came out, imagine my surprise to see him with a little boy who was barefoot and in pajamas.  As many of regular readers already know my grand baby lives in another state, so seeing a strange little person in the kitchen couldn't be good, particularly when he asked me to watch him while he put on his shoes.  When he came back from putting in his shoes, he told me he was going to look for the little boy's parents because we had never seen him before, and had no idea where lived. OMG!

He picked him up and went door to door in our complex trying to find the parents with no luck.  Before I knew it, there was a crowd at our door wanting to know what was going on.  By this time, he was back to get the car to canvas the neighborhood to find out where this child had come from.  After an hour of looking with no luck, we provided him with pop tarts, another neighbor provided juice, as he headed to the police station to file a report.

Now as the crowd that was at the door spilled out into the complex, another neighbor came home from work and joined the crew to find out what was going on. She mentioned that a visitor from Illinois had a son and lived in a house my husband had knocked on with no answer earlier. Kudos to her for remembering that! I knocked loudly for several minutes before she finally answered.

To say that this woman was sick inside would be an understatement, and I'm sure you can imagine getting out of bed to find your child was no where in the house.  She said that he normally wakes them up, but he didn't this morning.  Trying to make light of the situation as she walked to her car, I advised her that he decided to go car shopping on his own and didn't want to awaken her to which she smiled.

Thank goodness my husband saw this young child before  he wandered off any further.  He really is a blessing, and a special hero.  This could have been a horrible tragedy.  But everything worked out wonderfully and the little guy is safely back home with mom.

Meanwhile, if you see this adorable and very cute guy (in the car with my hero hubby as they tried to find his house) in your neck of the woods, make sure the doors to you car are locked!
Handsome Hero Hubby back home relaxing after everything was resolved, wanting a huge breakfast. (lol)

Who said hanging out at car dealerships couldn't be profitable?  It's true.  If you are prompt, detail-oriented and can provide descriptive,well written reviews, you can get money just for sharing information of your visit to purchase a vehicle, including test drives.

These mystery shops should include everything from the moment you get in the door, such as how you were greeted, cleanliness, and customer service, until you leave.  But how do you get out of actually buying that car that you're talking about in your review?  Don't say you need to discuss it with your significant other, as the salespeople may be pretty persistent, and not give up that easily.  Try telling him or her that you have a list of dealerships you'd like to visit and will keep them in mind.
