Super simple recipe which serves 4.
Salt & Pepper to taste
12 Oz. Penne
1 5-Oz Can Tuna packed in Oil
1 15.5 Oz Can of Cannellini Beans, drained and rinsed
2 Tbsp Capers, chopped
2 Tsp Lemon Juice
1/4 Cup Extra-Virgin Olive Oil
2 Tbsp Grated Parmesan Cheese
Several Fresh Basil Leaves, torn into large pieces
1. Bring a large pot of salted water to boil, then add the penne, cooking until al dente, about 11 minutes, or as the package directs.
2. Put tuna and oil into a small heat-proof bowl, and gently flake with a fork. Add in the beans, capers and lemon juice, stirring to combine, taking care not to crush the beans. Ladle in 1/2 cup of boiling water from the pot with the pasta.
3. Drain the pasta and return to the pot. Add the tuna mixture and olive oil, then toss gently. Sprinkle with the grated cheese, top with the basil and serve warm. You're all set!
Mmm that looks good! I don't eat Tuna but the rest...yums!

Bwahaha it'll be an interesting day for sure when that interview goes live. lol
