FULLY LOADED POTATO SALAD & SOCIAL MEDIA ETIQUETTE

I had a few moments yesterday to stalk some other Facebook pages intending to see fun posts or new quotes, and goodness did I get a surprise!  Almost everywhere I looked there were such negative things being said that it seemed like s scene from a bad horror flick.  People were called b****h, c***t, stupid, retarded, etc.  One guy went so far as to call someones wife an ugly goat during a discussion about something totally unrelated because this man disagreed with him. Then they were threatening to meet each other for a fight!  Someone else called a person a baby raper. Over at Amazon  a blogger was verbally attacked because she gave a good review about a novel for Pete's sake.  Would these people say these things in person?


Everyone is entitled to an opinion.  That's what makes the world go around.  But why in the world is there a need to make things personal or to become mean-spirited via Twitter, Facebook or Instagram? My mom used to tell me that if you don't have anything good to say, don't even speak about it. Words hurt.  What happened to the neat posts about good grades, new releases, funny animals, getting married, how your day went, meeting new friends, or what we saw on television? Enough of my rant for right now.


Now on to this fab recipe.  I am a serious potato eater, so I'm willing to try new recipes for potato salad every chance I get.  Even better, if you can find a reason to add some bacon, I'm all in!  For those who don't like mayo, you'll love this one!


INGREDIENTS
2 Lbs Baby or Small Red Potatoes
4 Slices of Bacon (Heck, if you like it, feel free to add more, go for it-lol)
         Turkey Bacon, Pork Bacon or Beef Bacon work fine - whichever you prefer.)
1/3 Cup Sour Cream
1/3 Cup Ranch Dressing (Not a fan? Use mayo instead)
2 Scallions, sliced
2 Tbs. Chopped Fresh Parsley
1 Tbs White Vinegar
1/4 Tsp Salt & Pepper (As always, add cayenne for some heat if you like)
1/2 Cup Shredded Cheese (2 Oz.)

DIRECTIONS
In a large pot, combine potatoes with enough salted water to cover, then bring to a boil.  Cook until just tender, about 15 minutes. Drain, then rinse under cold water.  When cool enough to handle, cut each potato in half.

Meanwhile, in a large nonstick pan, cook your bacon over medium heat until crisp, about 8-10 minutes.  Drain on paper towel.  When cool, break into small pieces.

In a large bowl, combine sour cream, ranch dressing, 1/2 of the scallions, parsley, vinegar, 1/2 of the bacon and salt & pepper.  Toss the potatoes in dressing with half of the cheese.  Transfer to a bowl, top with remaining cheese, bacon and scallions.

Put in fridge until ready to serve.  You're all set to wow your guests!

  1. Ro, everytime I come here, you make me hungry! LOL, always with the food recipes missy! I luvs it. This recipe looks really good and I like its ranch instead of Mayo, I'll have to try it.

    People can't help but be negative when they're angry, its way easier than trying to come up with a valid reason or a nice comment. Plus, people think cause your online you dont have to be accountable for the things you say, its the hiding behind the computer syndrome.

    1. LOL - that's my problem. I'm always thinking about food for some strange reason. True, I get the anger, but you know how I feel about abuse, so once people start attacking people on a personal basis, that's out of order and uncalled for. I think you're right? Would it be said face to face? Hugs...

  3. Keyboard warrors really get on my nerves. Most of the people seen bullying people online would NEVER say things like this in person. People just lose touch with reality when socializing online *shakes head* Have I mentioned I love that youhand out life lessons with delicious food recipes? I really enjoy that about you :D

  4. Haha, Magic Mike XXL? I'm still trying to wrap my head around the 1st one! That being said I am not a fan of strip clubs. Even less of putting dollars in G-strings, although, I have been known to fold some pretty neat dollar airplanes and fly them on stage :)

  5. I follow US politics, so I've got a whole slew of political figures and media sites on my FB feed on a daily basis. Let's just say I troll a lot of comments, but I'm too shy to speak out/speak up. I see how nasty people gets over there, so I know what you mean.

    Not a fan of Magic Mike. Ick. Lol.

    1. I hear you on that one, Joy. Politics is a big deal in the US for sure, and I've seen it get very ugly. I don't know if I'm a fan, really, but it's interesting to watch I guess on television. There's no way I would ever actually go to a strip club to have a man gyrating on me. (lol) Too shy and would be embarrassed. Hugs...

  6. Sadly my hubby doesn't want to take me to see Magic Mike..lol. I haven't even watched the first one..maybe Netflix? LOL Yes, the internet has been ugly of late. I just jump off and go to my happy reading place. The loaded potato salad sounds delicious!

My hubby has less than admirable things to say about the movie in general, Kim, so I can definitely relate. he won't care if I watch it on tv, but he'll have crazy things to say about it later. He knows I'm way too shy to visit an actual strip show, nor would I give away and money too close to a man's privates. (lol) Reading a neat novel is definitely more fun when things get ugly online.     People are crazy online sometimes. That's one thing I try to be on top of in all of the groups/pages I run. If someone starts acting like that they're out. There's just no reason for that kind of behavior.

    1. Whew! I've seen veggie burgers in the store, but never knew there was veggie bacon. I love all types, so I'm going to have to give that one a try, for sure. Yeah, definitely no reason to have to deal with that negativity. Hugs...

  8. I like the idea of bacon in patotoe salad...that looks really good. I might have to try that recipe out.

    I just ranted on FB about men youtubers calling women ugly. People are just so out of control these days, it don't make any sense. But what shocks me the most is the women that follow them and agree...like what?! smh.

    I'll pass on Magic Mike but if you go, lets us know...lols.

    1. WTF? haven't heard about the YouTube stuff, but that sounds totally crazy! And women jumping aboard in agreement, too?     Agreed about the Social Media meanness. I think those types have their closet bullies come out when they feel protected by the distance of the internet. So wrong!
