Okay, so veggies are good for you, but in this instance, not only are you eating healthy, but this recipe actually tastes yummy! Again, because it's super simple to make, I'm totally on board.
1 Tbs Chopped Walnuts or almonds - your choice
1 Tbs Oil - feel fee to use olive oil
1/2 red onion, cut into 1/2" wedges - come on, who has time to measure? Just cut up what you like.
1 Bunch Swiss Chard or 1 Bunch of Kale, trimmed and chopped with the stems thrown out.
1 Tbsp Cider Vinegar
1/4 Tsp Salt and 1/4 Pepper
If you like some heat like I do, throw in some cayenne pepper.
Heat a large nonstick skillet over medium heat, then add the walnuts, stirring and cooking until you can smell them and they are toasted, which should be about 2-3 minutes. Remove them from the pan then set aside.
In the same pan, heat some oil over medium heat, then adding the onion, stirring occasionally until soft and golden brown, which should be about 10 minutes.
Stir in Swiss Card or Kale and cover. Stir occasionally until the greens are soft and wilted, which should be about 3-4 minutes. Stir in the vinegar, salt, pepper, cayenne if you like, continuing to cook and stir until the liquid evaporates. Transfer to a pretty serving dish so your guests are appreciative, then sprinkle with the nuts of your choice. Done!
