SAVORY SWEET POTATO FRIES

Let me first say that putting your fries in a cool wrapping like this may impress your friends, but it's just as simple to give them to everyone on a platter and it will look quite elegant.  Also, if you have a whole lot of potatoes just sitting around the house, you may as well use them for something other than sweet potato pie!

Anyhoo, here are the ingredients for this super simple recipe:

4 Large Sweet Potatoes
2 2/3 Tablespoons Fresh Parsley, Chopped
2 2/3 Tablespoons Tarragon, Chopped
2 2/3 Tablespoons Fresh Rosemary, Chopped
2 2/3 Teaspoons Lemon Juice, lemon or from the jar, whichever you feel like doing - lol
2/3 Teaspoon Cumin
Salt and Pepper to Taste
1/3 Cup Olive Oil

Peel the sweet potatoes and cut in half lengthwise, then cut them into long edges.

Soak the potatoes in cold water, covered for 1 hour, then drain them and pat dry with paper towels.

Coat the wedges with olive oil, and cook until nice, tender and crisp - about 30 minutes.

Place the potatoes in a bowl and add the parsley, tarragon, rosemary, lemon juice, cumin, salt and pepper.  Toss well to coat everything, then wow those guests with your culinary expertise!
