CRUNCHY GARLIC CHICKEN

Chicken is one of my favorite foods, so I enjoy finding new ways to prepare it.  This is super simple to make by preparing it in the oven and serves 6.

2 Tablespoons Butter or Margarine, melted (1)
2 Tablespoons Butter or Margarine, melted (2)
2 Tablespoons Milk
1 Tablespoon Chopped Chives
1/2 Teaspoon of Salt
1/2 Teaspoon of Cayenne Pepper (Optional)
1/2 Teaspoon of Garlic Powder or more, if you prefer.
2 Cups Cornflakes Cereal, Crushed
1/2 Teaspoon Paprika
3 Tablespoons Parsley
6 Boneless, Skinless Chicken Breast halves

Heat your oven to 425 degrees, then grease a rectangular pan, or whatever your chicken will fit into.

Mix 2 tablespoons Butter, Milk, Chives, Salt and the Garlic Powder and cayenne.  Mix in the cornflakes, parsley and paprika.  Dip the chicken into the milk mixture, then coat lightly and evenly with the cornflake mixture.  Place it into your pan, then drizzle it with 2 tablespoons butter.

Bake uncovered 20-25 minutes or until the chicken is no longer pink on the inside when cut.

You're all set for dinner and one serving is only about 210 calories.
