QUICK TERIYAKI NOODLES

This recipe is really simple to make and tastes great!

1 Cup Hot Water
6 Dried Shiitake Mushrooms
8 Ounces Uncooked Soba (Buckwheat) noodles or whole wheat spaghetti
1 Tablespoon Vegetable Oil
1 Large Onion - Sliced
1 Package of Sliced Mushrooms
8 Ounces of Fresh Portabella Mushrooms
1/3 Cup Teriyaki Sauce of your choice
1/4 Cup Cilantro

Pour the hot water over the dried mushrooms in a small bowl, letting stand for about 20 minutes until softened, then drain.  Rinse with warm water, then drain again.  Squeeze all of the excess moisture from the mushrooms, then cut off the stems.

Cook and drain the noodles as directed on the package.

Heat oil in a skillet or wok over medium-high heat.  Add onion, then stir fry for about 3 minutes. Add in the all of the mushrooms, stirring for another 3 minutes, then add in the teriyaki sauce and lower the heat.  Partially cover and simmer for 2 minutes more until all of the veggies are tender.  Stir in the noodles and cilantro until well distributed.  For heat, add cayenne pepper to taste.  If you like, add sesame seeds for garnish, then serve.
