This is a great meal to lose weight or to minimize blood sugar spikes, and it tastes fantastic!
INGREDIENTS
5 Medium Red Skinned Potatoes, washed but not peeled
1/2 Cup Mayo (or Low-Fat Mayo)
1 Tbs. Apple Cider Vinegar
1 Tsp Dijon Mustard
1/2 Tsp Salt + 1/2 Tsp Pepper
1/2 Tsp Cayenne Pepper (Optional)
1/4 Bunch Sliced Scallions (Only the green tops)
3 Large Ripe Avocados, diced
Cut the potatoes into 3/4" dices, then boil or steam until fork tender. Drain and let cool, placing the cooked potatoes into a large mixing bowl. In a separate bowl, whisk together the mayo, vinegar, mustard, salt, pepper and scallions. Fold this mixture into the potatoes until well coated. Gently fold in the diced avocado, being careful to not mash. Refrigerate for 2 hours before serving.
