COWBOY CAVIAR

You may have already tasted this at a friend's party, but I was drawn to it because the name of the recipe is pretty darn sexy!  Anyhoo, it's simple to make and really tasty.

2 Tablespoons Red Wine Vinegar
1/2 to 2 Teaspoons Hot Sauce (Texas Pete, RedHot or Frank's)  Add more if you like more heat
2 Teaspoons Olive Oil
1 Medium Clove of Garlic, Minced (Or use the Garlic already chopped in a jar to save time)
1 Dash of Pepper
1 Can of Black Beans or Black-Eyed Peas, Rinsed and Drained
1 Can Corn, Drained
1 Avocado, Chopped (1 to 1 1/2 Cups)
1 Cup Chopped Tomato
1/4 Cup Sliced Scallion, both white and green parts (or use chopped onion)
1/4 Cup Cilantro, Chopped
1 Bag of Tortilla Chips - your choice

Mix the red wine vinegar, hot sauce, olive oil, garlic and pepper in a mixing bowl, then set it aside.

Place the black beans, corn, avocado, tomatoes, scallion and cilantro in a large mixing bowl, gently stirring to combine.  Pour the dressing on top, just enough to coat it.

Spoon the mixture into a glass, plastic or stainless steel serving bowl, then place the covered dish into the fridge until ready to serve.  When you're ready to eat, place it on a platter or in a basket surrounded by the tortilla chips.  If you manage to have any leftovers, use it the next day as a salsa for grilled chicken or fish.
